Dublin Rhubarb Tart
In a recent visit to Ireland I was delighted to receive a recommendation for a restaurant, The Dew Drop Inn in the Village of Kill (the word Chill in Irish means “the church”) in County Kildare.
This is a delightful GastroPub that has been under the innovative management of Ronan Kinsella and Paul Lenehan who have introduced a wide range of craft beers some brewed in a nearby brewery and food with an Irish theme. They offer seasonal menu’s sourcing local produce and I was excited to relive a little of my childhood with their unique and innovative approach to Dublin Rhubarb Tart.
This was a delightful take on my childhood favorite and featured the crisp fruity smell of rhubarb blended with crumble, raisins, caramel and a fresh liquorice infused custard. It was the perfect finish to a great dinner and I was transported back to my childhood home and the excitement of the home made Rhubarb Tart.
